Even when I was eating dairy ice creams, I found most chocolates weren’t strong enough for my taste. It was one of the first flavors I tried to veganize, and the first that convinced me there was real potential here to make something special. We taste-tested a LOT of chocolates and cocoas and recipes – tough work – to find the right sources and right balance of flavor and texture (strong and smooth).
