French Green Lentil soup cooking directions:
You need 1 Tablespoon EVOO (extra virgin olive oil), 1 small onion chopped, 1/4 tsp salt (optional), 4-5 Cups water or broth, splash vinegar or sherryÂ
1: Heat soup pot, slow cooker or instant pot on saute, add EVOO & onion. Saute about 5 minutes. Add water or broth & contents of French Green Lentil soup mix. Optional – Add 2 – 4 cups cubed root veggies or hard squash.                                Â
2:Â Stovetop:Â Bring to boil reduce heat to low cover & simmer @45 min – 1 hour or until lentils are tender.
Slow cooker:Â Put everything in slow cooker, cover cook on low 8 hours or until lentils are tender.
Instant Pot:High pressure 10 minutes, natural release 15 minutes. Just before serving, add splash wine, vinegar or sherry. Salt & pepper to taste.  Makes 8 or more One Cup Servings              Â
