Our fresh Texas Pecans are incredibly delicious and Certified Organic. Grown on a small family Pecan farm in Texas, they are not broken or pieces, but full halves, graded at the highest quality available. Each nut has been soaked and dried at low temperatures. They are tender and crispy, a delight to snack on!

They are soaked as Sally Fallon and the Weston A. Price Foundation suggests, and then dehydrated at low temperatures.

We do our best to procure the highest quality nuts available. These come from a small family farm in Texas. They are wonderful, certified organic pecans coming from another small business in a rural community in America.

Once received these pecans are soaked and dried under controlled conditions with commercial equipment in a USDA inspected kitchen. We take extra measures, such as refrigeration and vapor barrier packaging to insure that you receive only the best.

In July 2003, the FDA released a qualified health claim stating “Scientific evidence suggests, but does not prove, that eating 1.5 ounces per day of most nuts, as part of a diet low in saturated fat and cholesterol, may reduce the risk of heart disease.”

What are the Benefits of Soaking and Dehydrating Nuts?

Sally Fallon and the Weston A. Price Foundation suggests that nuts be soaked and then dehydrated at low temperatures—here’s why:

Phytic acid occurs naturally in nuts, and it protects them until they’re ready for germination. Unfortunately, phytic acid binds to certain minerals and transforms into a phytate, which inhibits your body’s ability to absorb some of the nut’s nutrients.

After several cycles of soaking and rinsing and allowing the nuts a little bit of air, germination will occur. This starts to break down the enzyme inhibitors as the nuts release their protective shield and unlock stored nutrients to prepare for growth.

Once the soaking process is complete, we dehydrate the nuts slowly at a very low temperature to extend the shelf life and give them a delicate crunch. The low-heat method will preserve the nutrients and ensure that the pecans remain entirely raw.
