Cacciatore Slow Cooker Directions:
- Season the chicken with salt (optional) and pepper. Heat olive oil in saute pan and brown chicken breasts about 3 minutes per side. Remove chicken to plate. Add sliced onion to pan and cook about 5 minutes. Deglaze with 1/4 C white wine. Place browned chicken & onions in slow cooker. Sprinkle contents of packet on top of chicken. Add 1 28 oz can whole tomatoes (lightly crushed by hand or with knife), top with (optional) large dice peppers & mushrooms
2. Cover and cook on low 4-6 hours for boneless breasts, 7-8 hours for bone in chicken or on high 2-3 hours for boneless breasts and 4-5 hours for bone in chicken.
- Pasta can be added to crockpot with an additional 2 cups of hot water for last 30-45 minutes of cooking time. Make sure pasta is submerged in liquid. Remove bay leaf before serving. Serve with freshly grated Parmigiano-Reggiano
