FDA-COMPLIANT, RAW, ORGANIC ALMONDS
The FDA requires that all almonds sold in the United States be quickly steamed for pasteurization purposes. At Wildly Organic, we steam our almonds in a way that they can still be considered “raw” and then activate the nut’s natural-nutritional potential through a soaking and dehydrating process.
All of the nuts featured in our organic, raw nut collection have been soaked and then dehydrated at low temperatures for a deliciously satisfying crunch. Our bulk raw almonds are of the “nonpareils variety,” which is considered the largest, and possibly the sweetest, type of almond. Though almonds typically contain between 4-8% moisture, once our dehydration process has been completed, the almonds contain between 1-2% moisture, giving them a longer shelf-life while still retaining the nut’s natural nutrient content.
WHAT ARE THE BENEFITS OF SOAKING AND DEHYDRATING ORGANIC ALMONDS?
The Weston A. Price Foundation and nutritional cookbook writer, Sally Fallon, suggest soaking and dehydrating nuts at low temperatures for optimal nutrition and health benefits.
Nuts, like almonds, naturally contain phytic acid to help protect against damage as the nut grows. As the nut matures, however, the phytic acid binds to other minerals within the plant and transforms into a phytate which inhibits your body’s ability to absorb some of the nut’s nutrients.
To help remove the phytate compounds from our bulk organic almonds, each batch goes through several rounds of soaking, rinsing, and drying to help encourage the nut’s natural germination process. This process, sometimes referred to as “sprouting” or “activating” the nuts, helps break down the phytate enzyme’s in our bulk raw almonds so your body can fully absorb the almond’s naturally occurring nutrients, including:
One serving of almonds provides:
- 3378mg of Omega-6 fatty acids
Over 10% Recommended Daily Value of:
- Riboflavin
- Protein
- Fiber
- Phosphorus
- Copper
Over 20% Recommended Daily Value of:
- Vitamin E
- Magnesium
- Manganese
Once the soaking process is complete, we then slowly dehydrate the nuts at a very low temperature. This helps extend the shelf life of our organic almonds and gives them a delicate crunch without subjecting them to high-heat roasting. The result is a carefully-crafted delicious, raw product that our customers love
